Chicken Adobo

Ingredients (for 4-6 people):

1,2 dl soy sauce 

1 tbsp brown sugar

10 cloves of minced garlic

¼ tsp whole black pepper

2 tbsp canola oil

6 chicken thighs (with bone and skin)

4 chicken wings (with bone and skin)

5 bay leaves

1,7 dl white vinegar

1 spring onion, finely chopped


Mix soy sauce, sugar, garlic and pepper in a bowl. Add the chicken, and let it marinade for at least 30 minutes.

Heat the oil in a dutch oven. When warm, add the chicken, but keep some of the marinade in the bowl. Fry the chicken for about 5 minutes (until golden brown) on one side.  Flip it and add the rest of the marinade and bay leaves. Let it simmer for about 15 minutes. You can then add the vinegar, turn down the heat and add the lid. Let it cook until the chicken is properly done, for about 20 minutes. Set the chicken aside and let the sauce thicken for a few more minutes.

Reheat the chicken in the sauce, and serve with rice and chopped spring onion.
