(for 2 portions)
250 g all purpose flour
½ tsp salt
2 egg yolks (if the eggs are small we use some of the egg white as well, if not the pasta tends to be too dry)
Pour the flour on your worktop (kitchen counter), and form a crater in the middle.
Add the eggs and salt into the crater, and mix it carefully using a fork or your hands(this takes a bit of practice). Knead the dough for about 5 min.
The dough is done when it is soft and a bit elastic. Wrap it in cling wrap, or in a plastic bag, and let it rest for about 30 minutes.
All the dry pieces of dough that fall of can just be brushed aside, you don't want to keep them!
With this dough you can make most types of pasta, as this is a base for all the rest ;)
