2-4 chicken breasts, cut into big pieces
2-3 potatoes, peeled and cut into big cubes
3 carrots, peeled and cut into big pieces
1 onion, cut into big pieces
(We also like to add sweet potatoes)
4 cloves of garlic, finely chopped
1-3 tbsp gochujang (Korean chili paste)
2 tbsp soy sauce
1 tbsp gochugaru (Korean chilli flakes)
1 tbsp sugar
2 tbsp rice vinegar
1 tbsp sesame oil
1 tbsp sesame seeds + extra for garnish
Chopped spring onion for garnish
Mix the sauce ingredients,and add to a big pot. Add all the other ingredients and bring to a boil with a lid on. Reduce the heat to medium heat when it starts boiling and let it simmer for about 40 minutes with the lid still on. Stir occasionally.
Sprinkle some spring onion and sesame seeds on top and serve with a bowl of steaming rice.
