Minestrone soup

Ingredients:


Oil

1 onion, finely chopped

2 carrots, finely chopped

2 ribs celery, finely chopped

2 tbsp tomato paste

½ sweet potato, cut into cubes

½ squash, cut into cubes 

1 paprika, roughly chopped 

(Feel free to add any other vegetables you have at your disposal)

4 cloves of garlic, minced

1 tsp oregano

1 tsp thyme

1 can of diced tomatoes

1,5 liter water 

2 vegetable bullions

1 tsp sea salt

2 bay leaves

1 tsp red pepper flakes

Pepper

Ca 3-5 dl of pasta

1 can/ box of beans (cannellini, kidney, garbanzo) 

A handful of fresh spinach 

2 tsp lemon juice

Directions:


Warm oil in a large pot over medium heat. When warm, add the onion, carrot, celery, tomato paste and a pinch of sea salt. Let it cook for 7-10 minutes, or until the onions are translucent.


Add the vegetables, garlic, oregano, thyme and cook for another 2 minutes.


Then add  the tomatoes, water, bullion, salt, bay leaves, red pepper flakes and pepper. Bring everything to a boil, then partly cover the pot with a lid. Let it simmer for 15 minutes.


Remove the lid and add the pasta, beans and spinach. Let it simmer for another 15 minutes, or until the pasta is cooked.  


Remove the bay leaves, and add the lemon juice and a dash of oil. Season with salt and pepper.


We recommend serving it with some focaccia bread and parmesan cheese ;)
