Pasta with Beef and Basil Pesto

30-40 Minutes



Butter for cooking

About 200 g cooked pasta

500 g beef in strips

1 red onion, finely chopped

1 squash, cubed

1 handful of black olives

1 handful of sun-dried tomatoes

Salt and pepper to taste

Parmesan for garnish 

Basil Pesto (You can use store bought pesto for an easier recipe):

About 25 g fresh basil

40 g roasted pine nuts

30 g grate parmesan cheese

1 clove of garlic, finely chopped

Juice of one lemon

1 dl olive oil

Salt and pepper to taste


Mix the basil, pine nuts, parmesan and garlic in a food processor or other kind of mixer. Add the oil, a little at a time, until the consistency is to your liking. Season with lemon juice, salt and pepper. Set aside.

Season the beef with a lot of pepper and some salt. Add some butter in a frying pan and cook the beef for a few minutes. Set the beef aside when it is still medium rare. 

Saute the red onion until it is transparent. Add the squash and saute for a few more minutes. You then add the olives and sun-dried tomatoes and cook everything for a minute or two. 

Add all the other ingredients to the pan and mix together. Season with salt and pepper and garnish with some extra parmesan cheese on top.
