150 g Butter

200 g Flour

2 tbsp Water


2-4 Chicken fillet diced

1 white onion

200 g spinach

5 Eggs

3 dl Milk

1 ts Salt

½ ts pepper

Grated cheese (enough to cover the quiche)

Mix butter and flour, then add water, and combine it. Let the dough rest for 30 minutes before pressing it out in a quiche form. Bake it for 15 minutes at 200°C (preferably have some weight in the middle to keep the shape of the quiche).

Finely chop the onion and fry it with the chicken. Add the spinach and cook on high heat till the spinach is ready. Spread the filling evenly in the baked quiche dough.

Whisk together eggs, milk, salt and pepper, and pour it over the quiche. Cover the top with grated cheese to form a “lid”. Bake it in the oven for 25 min at 200°C, the cheese should be golden brown.

Let it rest for 5-10 minutes before serving.
