Salmon with Mango Salad


For salmon:

2 salmon fillet

1-2 tbsp oil

Zest of one lime

Juice of half a lime

2 cloves of garlic, minced

Mango salad:

½ mango, cut into small pieces

½ avocado, cut into small pieces

Juice of half a lime

¼ red onion, finely chopped 

1-2 tbsp coconut milk 

A bunch of cilantro

Coconut rice:


Coconut milk




Combine the ingredients for the salmon and let it marinade for about 20 minutes. 

In the meantime make the mango salad and prepare the rice. 

Make as much rice as you prefer. For a serving for 2 people, we recommend adding a can of coconut milk, a bit extra water, 1 tbsp sugar and ½ tsp salt. 

Fry the salmon on high heat for 3-5 minutes on each side.
