Summer Rolls

Ingredients:


Rice paper

Ca 200 g rice noodles (vermicelli)

1 chicken breast (we have also used prawns and tofu)

2 tbsp peanut sauce

1 carrot, julienned

½ paprika , cut into sticks

½ cucumber, cut into sticks 

(You can of course use any other vegetable also, such as lettuce, spring onion or cabbage)

Fresh herbs (such as mint, basil and cilantro)

Directions:


Start by boiling the rice noodles as instructed on the package.  When they are done, rinse them in cold water and use a scissor to cut them into smaller pieces. 


In the meantime, start cooking the chicken. When it is thoroughly done, let it rest for a few minutes before you shred it into pieces.


Mix the noodles, shredded chicken and peanut sauce together in a bowl, and set aside.


Dip the rice paper in water and place on a large plate(put some sesame oil on the plate to prevent the rice paper from sticking).


Start by placing the herbs in the middle, facing down. Place all the other ingredients over the herbs as you would when making a burrito. Also wrap it together like a burrito. First one long side, then the two short ones, and finally the other long side.
