Tteokbokki (Korean Rice Cakes)

30 Minutes

75 g tteok (rice cakes)

100 g sliced napa cabbage

1-2 spring onions, roughly chopped

100 g Korean fish cakes (if you can find)

7 dl water (or dashi stock)

3 tbsp gochujang (Korean chilli paste)

1 tbsp soy sauce

2 tbsp sugar

1 tbsp chopped garlic

2 boiled eggs, some instant noodles and mandu (Korean dumplings) for extra delicious taste!

Let the tteok soak in water for at least 20 minutes if they have been frozen or are dry. In the meantime, prepare the vegetables. This is also the time for preparing the eggs, noodles and mandu.

Heat up the sauce ingredients in a deep wok/frying pan. Add the tteok, and let them simmer until they are soft and the sauce has thickened (8-10 minutes). Remember to stir regularly to prevent the tteok to stick to the pan.

Add the vegetables, fish cakes and the other ingredients of your liking. Let this simmer for another 5 minutes or so and serve immediately!

This is a popular street food in Korea, and a prefect comfort food to have on a cold winter day!
