Wild Rice Soup

50 minutes

Ingredients:


125 g wild rice

1½ l vegetable bullion 

2-3 mushrooms, sliced

3-4 garlic cloves, finely chopped

2 carrots, cut into small pieces

2 celeries, cut into small pieces

1 big sweet potato, cut into small dices

1 onion, finely chopped

2 bay leaves

2 tsp of cajun seasoning ( a mix of smoked paprika, salt, garlic powder, black and white pepper, onion powder, oregano, cayenne, thyme)

1 can of coconut milk

1 handful spinach

Salt and pepper

Directions:


Heat some oil in a casserole, and cook the mushrooms for a few minutes. Add the garlic, and fry it for 30 sec. Add the rest of the ingredients except the coconut cream and spinach. Let it simmer for about 40 min, then add the coconut cream and spinach. Let it cook for a few more minutes while you season with salt and pepper.


Serve it with a side of garlic bread for an extra delicious meal :D
